Every pot of birria that leaves here is cooked on this one truck by José A. Vela, Selene Cuevas Dorantes and their family, from recipes that travelled with them from Tierra Colorada, in the municipality of Juan R. Escudero, Guerrero.
Tortillas are handmade. Meat is your choice — pastor, asada, pollo, birria or chorizo, with tripa, cabeza and lengua available for an extra charge. Aguas frescas are poured fresh. It is the same food whether you are standing at the window in Burien or having it sent to Burton.

Birria, mostly. Birria de res with beans, rice, handmade tortillas, salsa and lime; quesabirrias pressed until the edges crisp; flautas de birria fried and topped with lettuce, sour cream, cheese and tomato. Rich food for a cold harbor evening.
