About the food truck
A Burien truck, not a chain
There is no commissary and no corporate menu behind this. José A. Vela and Selene Cuevas Dorantes run the truck with their family, cooking from recipes that came north with them from Tierra Colorada, in the municipality of Juan R. Escudero, Guerrero. Every order is made when it is ordered.
Tortillas are handmade. Meat is your choice — pastor, asada, pollo, birria or chorizo, with tripa, cabeza and lengua available for an extra charge. Aguas frescas are poured fresh. It is the same food whether you are standing at the window in Burien or having it sent to Seattle.
What Seattle orders
City orders skew toward the things that travel well and eat fast: quesabirrias, burritos, tortas, and asada fries. Plates of carne asada and enchiladas go north too, packed with rice, beans and handmade tortillas on the side.
Lunch that beats the block
If you work in SoDo, Georgetown or the industrial south end, an order placed online in the morning is a considerably better lunch than whatever is within walking distance of the shop. Order ahead and it is ready when you are.
